I am Italian-American. I grew up with spagetti, making ravioli with grandma on holidays, and saying 'Buona Pasqua' on Easter.

Despite my upbringing, I only came to truly love Italy when I traveled there for the first time. How to explain what italy means to me?

I love products in the region that produced them; in the dishes that have been perfected for generations and in the season when they naturally occur.

I love caffe freddo even better because I can't get one in Milano and because I can in Naples.

I love recipes that depend on the harmonious combination of a few ingredients of outstanding quality.

Here's a story that might explain my point. Once I was in Piemonte tasting with legendary barolista Bartolo Mascarello. Now-a-days, it is popular with winemakers (especially younger ones) to have several 'single vinyard' bottlings.

When I asked Bartolo how many Crus he produced, he looked at me with a slight start and said "there is only one Cru - Mascarello".

In other words, he produces Barolo the time tested way his fathers did: No need for aging in small casks, no need for French oak and concessions towards the International palate which looks for a more approachable, fruit forward wine.

Barolo is Barolo - and nothing else. It is the wine of that country and doesn't need to try and be anything different.

Anyway, that's just one of the many things I love about Italy

Most of the very best places I seen, things that I've eaten, people I've met were 'word of mouth' or happy accident. For example 'Tavernetta Rustik', Calderzone, Trentino (near Madonna di Campiglio) is a fabulous hole-in-the wall that I only learned about through a friend.
